   Ilmington, Warwickshire, a picturesque village built mainly of warm honey coloured stone, is one of the hidden gems of the West Midlands. Ilmington lies at the northernmost end of the Cotswolds, just beneath Ilmington Downs; the highest point in Warwickshire which offers a magnificent 360 degree view across the countryside. Garden lovers will enjoy the benefit of being able to visit two wonderful and well known gardens on their doorstep – Hidcote(National Trust) and Kiftsgate; and if that is not enough to inspire a visit just stay home let me add it is a mere 13 km (8 miles) south of Stratford-on-Avon. Summer-Salad-Stuffed Avocado - Tomato, Pepper, and Radish Salad in Avocado Shell
This antioxidant-rich rainbow salad provides 60 percent of your recommended fibre for the day supports healthy digestion and will keep you feeling full and energized.
INGREDIENTS
Juice of one lime1 teaspoon garlic, minced1 pinch cayenne1/4 cup yellow bell pepper, diced1/4 cup baby tomatoes, sliced3 radishes, diced1 avocado, halved and seeded1 tablespoon cotija cheese1 tablespoon cilantro, chopped1 tablespoon scallion, chopped
DIRECTIONS
Combine lime juice, cayenne, and garlic in a small bowl. Add yellow bell pepper, tomatoes, and radishes to the bowl, and mix well.
Set up your halved avocado on a plate, and scoop out extra flesh if necessary. Spoon your pepper and tomato salad mixture into the center of the avocado. Garnish with crumbled cotija cheese, scallions, and cilantro. (Source)
